bone-in pork chops cooked in a slow cooker

Here’s an easy bone-in pork chops recipe for the slow cooker—tender, flavorful, and

hard to mess up.

Slow-Cooker Bone-In Pork Chops

Ingredients

  • 4 bone-in pork chops, about 1 inch thick
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • Optional: ½ cup sliced mushrooms

Instructions

  1. Season the pork chops
Pat the chops dry and season both sides with salt, pepper, paprika, and thyme.
  2. Brown them first (recommended)
Heat the olive oil in a skillet over medium-high heat. Sear the pork chops for about 2–3 minutes per side, just until browned. This adds much more flavor.
  3. Prepare the slow cooker
Put the sliced onion and garlic in the bottom of the slow cooker. Place the pork chops on top.
  4. Make the sauce
Mix the chicken broth, Worcestershire sauce, Dijon mustard, and brown sugar. Pour it around the pork chops.
  5. Cook
Cover and cook on LOW for about 3–4 hours. Bone-in chops can become dry if left cooking for too long, so avoid automatically cooking them all day.
  6. Check the temperature
Pork is safely cooked when the thickest part reaches 145°F (63°C), followed by a 3-minute rest.
  7. Serve
Spoon some of the flavorful cooking juices over the chops. They’re especially good with mashed potatoes, rice, green beans, or roasted vegetables.

For extra creamy chops

After removing the pork, you can stir ½ cup sour cream or heavy cream into the cooking liquid. For a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water, stir it in, and cook briefly until thickened.

Tip: If your pork chops are thin (less than about ¾ inch), check them early—the slow cooker can dry them out surprisingly quickly.
