Here’s a simple crispy-on-the-outside, fluffy-on-the-inside baked potato recipe.
Ingredients
-
2 large baking potatoes
-
1–2 tablespoons olive oil
-
½ teaspoon salt
-
¼ teaspoon black pepper
-
Optional toppings: butter, shredded cheese, sour cream, chives, or cooked bacon
Instructions
-
Preheat the oven to 220°C (425°F).
-
Wash and dry the potatoes thoroughly.
-
Pierce each potato several times with a fork. This allows steam to escape.
-
Rub the potatoes with olive oil, then sprinkle with salt and pepper.
-
Place them directly on the oven rack or on a baking tray.
-
Bake for 45–60 minutes, depending on their size. They’re ready when a fork easily slides into the center.
-
Carefully cut a slit along the top and gently squeeze the ends to open the potato.
-
Add butter and your favorite toppings, then serve hot.
Tip
For especially crispy skin, make sure the potatoes are completely dry before adding the oil and salt. Don’t wrap them in foil if you want crispy skin.
