🍰 5-Minute Diabetic-Friendly Mug Cake

Here’s a quick 5-minute, no-added-sugar cake that can fit into a diabetes-conscious eating plan. “Diabetic-friendly” doesn’t mean carbohydrate-free, so portion size and total carbohydrates still matter.

🍰 5-Minute Diabetic-Friendly Mug Cake

Ingredients

  • 2 tbsp almond flour

  • 1 tbsp unsweetened cocoa powder

  • 1 tbsp plain Greek yogurt

  • 1 egg

  • 1–2 tbsp unsweetened milk

  • ÂĽ tsp baking powder

  • A few drops of vanilla extract

  • Stevia or another suitable zero-calorie sweetener, to taste

  • Optional: a few chopped walnuts

Method

  1. Add everything to a microwave-safe mug.

  2. Mix thoroughly until you have a smooth batter.

  3. Microwave for 60–90 seconds, checking after 60 seconds.

  4. Let it stand for a minute before eating.

  5. Top with a spoonful of unsweetened Greek yogurt or a few berries if desired.

A note for people with diabetes

This recipe contains no added table sugar, but almond flour, milk, yogurt, and berries still contribute some carbohydrates. Individual blood-glucose responses vary, so check the nutrition information for your specific ingredients and consider your usual carbohydrate target.

If you use glucose-lowering medication or insulin, don’t assume that a “sugar-free” or “diabetic” label means unlimited portions.
