🍗 Oven-Baked Chicken Thighs With Caramelized Onions
Golden-brown chicken thighs nestled under sweet, tender caramelized onions and a savory pan sauce make this a comforting one-pan dinner.
Ingredients
-
6 bone-in, skin-on chicken thighs
-
3 large onions, thinly sliced into rings
-
3 tablespoons olive oil
-
3 cloves garlic, minced
-
1 cup chicken broth
-
1 tablespoon Worcestershire sauce
-
1 teaspoon paprika
-
1 teaspoon dried thyme
-
½ teaspoon black pepper
-
½ teaspoon salt
-
1 tablespoon butter
-
Optional: fresh parsley for garnish
Instructions
-
Heat the oven to 200°C (400°F).
-
Season the chicken: Pat the thighs dry. Season both sides with salt, pepper, paprika, and thyme.
-
Brown the chicken: Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Place the chicken skin-side down and cook for about 5–7 minutes, until deeply golden. Turn and cook another 2 minutes. Transfer to a plate.
-
Caramelize the onions: Add the remaining oil and butter to the skillet. Add the sliced onions and cook over medium heat for 10–15 minutes, stirring regularly, until soft and golden. Add the garlic during the final minute.
-
Make the pan sauce: Pour in the chicken broth and Worcestershire sauce, scraping up the browned bits from the bottom of the pan.
-
Combine: Return the chicken thighs to the skillet, placing them skin-side up over the onions.
-
Bake: Transfer the skillet to the oven and bake for approximately 25–35 minutes, depending on the size of the thighs. The chicken should reach 74°C / 165°F at the thickest part.
-
Finish: Spoon some of the savory onion sauce over the chicken and garnish with parsley.
🍽️ Serve it with
Creamy mashed potatoes, rice, roasted vegetables, or crusty bread are excellent for soaking up the onion pan sauce.
Tip: For especially crisp skin, don’t cover the skillet while baking, and make sure the chicken skin is thoroughly patted dry before browning.
