Vanilla Chia Seed Pudding
A simple, creamy breakfast or snack with plenty of fiber and healthy fats.
Ingredients
-
3 tablespoons chia seeds
-
1 cup milk of your choice
-
½ teaspoon vanilla extract
-
1–2 teaspoons honey or maple syrup, optional
-
Pinch of cinnamon, optional
-
Fresh berries or sliced fruit, for topping
Instructions
-
Add the milk, vanilla, sweetener, and cinnamon to a bowl or jar and stir.
-
Add the chia seeds and mix thoroughly.
-
Let it sit for 5–10 minutes, then stir again to prevent clumping.
-
Cover and refrigerate for at least 2–4 hours, preferably overnight.
-
Stir before serving and top with fruit, nuts, or seeds.
Tip: If the pudding is too thick, stir in a little more milk. If it’s too thin, add another teaspoon of chia seeds and refrigerate for another 30–60 minutes.
For a lower-sugar version, skip the honey/maple syrup and use naturally sweet fruit on top.
