  • 1 cup white or apple cider vinegar

  • 1 cup water

  • โ…“ cup sugar

  • 1 tsp salt

  • ยฝ tsp black peppercorns

  • ยฝ tsp mustard seeds

  • 1 small cinnamon stick

  • 2โ€“3 cloves garlic, optional

  • ยฝ small red onion, thinly sliced, optional

  1. Cook the beets: Trim and wash the beets. Boil or steam until fork-tender, about 30โ€“45 minutes depending on size. Cool, peel, and slice.

  2. Make the brine: Combine vinegar, water, sugar, salt, peppercorns, mustard seeds, and cinnamon in a saucepan. Bring to a gentle boil and stir until the sugar dissolves.

  3. Fill the jars: Pack the sliced beets and optional onion/garlic into clean jars.

  4. Add the brine: Pour the hot brine over the beets until completely covered, leaving a little space at the top.

  5. Cool & refrigerate: Let the jars cool, then cover and refrigerate.

  6. Wait for the flavor: They’re tasty after a few hours, but 24โ€“48 hours gives them a much better pickled flavor.

๐Ÿ’ก Tip: For refrigerator pickles, keep them refrigerated and use a clean utensil whenever serving.
